Round One: Kale

Salty and crispy. That sounds good. We decided to try kale chips.

There are many versions of the recipe on the 'net, but basically you wash the kale, remove the stems, and tear the leaves into smaller pieces. You can either coat the leaves with a little oil or just leave them damp. Spread the leaves out on a lightly oiled baking sheet and sprinkle them with salt. Bake for about ten minutes in a 350 degree oven.

They certainly were crispy, but we had way WAY too much salt on them! I also didn't expect them to come out as paper thin as they did.

Besides the salt problem, they were okay. It was interesting to try, but I think I'll like kale a lot better when it's cooked with some garlic and onions!

I've never tried kale chips -- they look pretty good. I love kale cooked all day in soup, or sauted in olive oil with onions and garlic and mixed in with those skin-on mashed new potatoes you've been eating. :)

We have a recipe here for kale with carmelized onions--that's next on the agenda! I never thought of mixing it with potatoes, though. Thanks for the idea!
