Coming Clean


I need to do one thing before I go any further with this blog: I have to explain about myself and vegetables. I've been struggling with how to explain this, so bear with me. Basically, I don't eat vegetables. Well, I eat potatoes and corn on the cob, and every so often I'll eat a few carrots, but if it's green? You get the picture. Part of the reason my husband and I joined a CSA is so I'll learn to eat more vegetables. The combination of the stuff being really fresh, straight from the farm, prepaid, and pretty much handed to us every week seems like it might do the trick. In any event, I'm willing to try. So when you see me talking about trying things, understand that it sort of goes beyond picky. I've been this way for forty years! What I've vowed is to try EVERYTHING. Some things aren't too intimidating, but there are some things I'm dreading (like beets). There is going to be some easing into things. I don't promise that everything I eat will be healthy. But this is my first step.

I was dreading the beets too when we first joined our CSA, and I'm a big vegie lover. I'd only ever had the icky slimy vinegar preserved ones you encounter at salad bars. Turns out they are like candy! My kids are demanding them, and they love sweet stuff. The fresh ones are so wonderful, just boil 'em and slip off the skins. And you can't beat (or beet!) that color.

That is good to know! Actually, several people have been surprised when I say I'm dreading beets, but, like you said, I think of PICKLED beets when I think of beets. I've eaten those deep fried beet chips that Terra makes, though, so I guess I'm all worked up about nothing.

I wandered here from wardrobe refashion, and had to laugh when I read this post. We joined a CSA for the exact same reason! There are a few things I'm dreading (in part because I have no idea what to do with things like beets), but I'll give anything a try once. I'll have to keep an eye on your blog to see how it goes for you, and you'll have to post your successful recipes!

Laine, It's so good to hear I'm not alone! I know exactly what you mean about having no idea what to do with some things! We didn't get too adventurous this week, but Gerry is already scheming about what he might do with next week's share. You'll definitely have to check in and please share your ideas and recipes too!
