Tuesday Night Clean Up Dish

We didn't have a ton of stuff left from last week, but what there was went into a Gerry creation.

He chopped up all the remaining greens (some mizuna, a tiny bit of tat soi, and some baby bok choy), sauteed them with a little garlic and a shallot, and added them to some eggs along with a blend of three cheeses (some swiss, colby, and an Irish cheddar). He poured this into a baking dish lined with an improvised tortilla crust.

Then it went into the oven at 350 degrees for about an hour.

He plans to eat this for breakfast with a dollop of sour cream and salsa. Me? I don't eat eggs!

He has been loving it all week! He took some into work yesterday to eat during a meeting--along with a few extra forks! Everyone loved it.
